
Recipe based on a WeightWatchers recipe - I am not putting the points on here. Please calculate your own points to ensure that you are using up todate values!
Put the pan with water in on to boil ready to cook the pasta.
Either spray a pan with spray oil, or use a small amount of coconut oil (make sure to point this if its used) and into it fry the bacon until crispy.
Add the chopped onions and soften, then add the minced garlic and cabbage and stir fry it all together. After about 3 mins add the cabbage.
Whilst this is stir frying put the pasta on to cook - should take approx. 10 mins.
Add the stock to the pan with the bacon and cabbage in and leave to cook for about 5 mins. When you are happy the cabbage is cooked to your liking stir in the Greek yoghurt and a few cups of the pasta cooking water.
Simmer it to reduce the liquid slightly. Drain the pasta and mix the pasta with the cabbage and bacon mixture.
Season with salt and pepper if required.
I had mine with a little parmesan sprinkled on top. The liquid was quite "liquidy" and if I wasn't dieting I would have been tempted to thicken it slightly with a mix of corn flour and stock/pasta water. But it was still delicious as it was.
I served four dishes out and still have some left over so I am going to try it cold for lunch at work tomorrow.
