Baked Donuts

These donuts are baked in the oven rather than fried in oil, so they must be slighty healthier...right????

Ingredients

For the Donut Dough

  • 460 g Strong Plain Flour (or Plain Flour)
  • 2 tsps Salt
  • 50 g Sugar (Granulated works best)
  • 7 g Active Dried Yeast
  • 60 g Butter or Margarine
  • 240 ml Milk (I used Skimmed but I think any would work)
  • 80 ml Water
  • 1 Tbsp Vanilla Extract

For the Glaze

  • 240 g Icing Sugar
  • 1 1/2 Tsp Vanilla Extract (I had ran out and it still tasted ok!)
  • 4-5 Tbsp Water (Needs to be fairly runny)

Instructions

  1. Mix the flour, yeast, sugar and salt together in a stand mixer fitted with dough hook.  You can do this bit by hand, but I love my K-Mix

  2. Next get the wet ingredients ready.  In a measuring jug, heat together the milk, water, butter and heat until luke warm, and the butter is melted. Then add in the vanilla extract.

  3. Turn the machine on low and slowly add the milk mixture. Mix for 2 minutes to activate the yeast.  You may want to stir with a spatula under the dough to make sure everything is mixed well.  My dough hooks mustn't quite reach the bottom as there was a lot of flour underneath when it looked done.

    Increase the speed to medium and mix until the dough is shiny and smooth, this will probably take approximately 8 minutes. The dough is supposed to be a wet dough.

  4. Grease your donut pans.  Mine are Silicon ones but I still grease them to ensure that they didn't stick,

  5. Coat your bowl with vegetable oil . Place the dough in the bowl and turn to coat lightly.

    Cover the bowl with cling film tight and let the dough rise until doubled, 1 ½ -2 hours.

    Once it has risen, turn out the fluffy dough onto a floured work surface.  I used a fare amount of flour on the surface

  6. Roll out to ½ “ thick.  Then using a round cutter to the size of your pan, cut out your donuts circles. (Dust your cutter in flour so it doesn’t stick). Then cut out the donut hole with a much smaller cutter again whatever you have.  I found a really small round cutter from one of the kids baking sets but an icing nozzle would do too.

    If you want to make donuts to stuff with Jam or nutella then cut a plain round donuts.

    You can refrigerate the cut out donuts at this stage, if you do they will be ok until the next day then you take them out and do the next bit.

    Cover the cut out donuts with cling film and leave for approx. 30 mins to rise a bit more. I made the Glaze whilst waiting for the final rise.  You basically mix all the glaze ingredients until smooth.

  7. Remove film and brush the tops with a little melted butter.  Then bake for approx. 15 mins at 180 degrees ( a bit of water sprinkled on the tray helps with the finish, but I didn't do it on all of them and they turned out fine!).

    Coat them with glaze immediately - I did one coat on all then another to add extra.

  8. Best enjoyed straight away - I kept mine in an air tight container and they were still ok the next day, but you could refresh them in the over.  The glaze may not be the same but they would still taste great!
