
This delicious casserole made in the Instant Pot is quick and easy for a weeknight dinner.
This may seem quite a vague recipe, but it seems to be very forgiving so I change it up depending on what I have.
Firstly, I dice the onion, set the Instant pot to Saute then saute the onion in the oil. Once it has gone translucent I add the sliced Kielbasa and fry that until it has colour on it.
Press cancel, add the potato - I normally slice these quite thickly. Then add the two cups of stock.
Put the pressure cooker onto high and make sure the valve is set to "Sealing". Set the timer for 5 minutes - this can take anywhere between 5-10 mins but you need to experiment as each machine seems to work slightly differently depending upon the altitude of where you live etc. If it's not quite done enough, you can put it back on again.
Turn off and quick-release the pressure.
Put it back on to Saute. Add the green beans and cheese and stir through. Heat until the beans are just cooked and the cheese is melted.
I have added cream, cream cheese or done this without any extra items- every time is slightly different but all have been tasty!!

Total time includes getting the instant pot to pressure and this can vary - takes approx 12 minutes in mine.
