
A lovely autumn/winter pudding to serve on its own with pouring cream or custard
Preheat the Oven to 180° and grease and line a loaf tin
Mix Brown Sugar and Cinnamon in a small bowl
Beat the White Sugar and butter (I used my K Mix for this) then when pale and fluffy add the eggs and vanilla and beat them in too
Fold in the flour and baking powder - do not over mix just fold it in until it's just incorporated
Stir in the milk
Pour half of the batter into the loaf tin, then add a layer of apple slices or chopped apple depending on your preference and some of the cinnamon sugar. Repeat with the rest of the batter and then top with more apples and cinnamon sugar, push them into the batter slightly.
Bake in the centre of the preheated oven. The recipes I looked at said 30-40 mins but mine took just over an hour - I covered it will foil when it started to look like it would be too brown. You know its cooked when a skewer comes out clean.
Leave to cool for 10-20 mins then remove from the tin.
Serve with leftover apples and cream
