Apple Cinnamon Bread

For this weeks recipe, I am sharing an Apple Cinnamon Bread recipe. This is lovely as a cake or as a pudding. I used normal eating apples that I got from someone at work who had an apple tree. If you use cooking apples you may need to alter the sugar levels.

I found this recipe on Pinterest, but I am unsure who to credit for it as there are a few versions.

In my opinion its the easiest tastiest Apple Cinnamon Bread recipe I have ever tried. I am not a huge apple and cinnamon fan but this smells and tastes delicious. Remember that this is a treat, you can enjoy a slice of this, just don’t eat the whole loaf in one go!!

It did take a lot longer to bake than I expected it too. I would stick it in for 30-40 mins and then if it needs more put it in, and check it every 5 mins.

Apple Cinnamon Bread

A lovely autumn/winter pudding to serve on its own with pouring cream or custard

Ingredients

  • Cup Brown Sugar
  • 1 Tsp Cinnamon
  • Cup White Sugar
  • ½ Cup Butter
  • 2 Eggs
  • Tsp Vanilla extract
  • Cups Plain Flour/All-Purpose Flour
  • Tsp Baking Powder
  • ½ Cup Milk I used skimmed
  • 1-3 Apples Peeled and chopped

Instructions

  1. Preheat the Oven to 180° and grease and line a loaf tin

  2. Mix Brown Sugar and Cinnamon in a small bowl

  3. Beat the White Sugar and butter (I used my K Mix for this) then when pale and fluffy add the eggs and vanilla and beat them in too

  4. Fold in the flour and baking powder – do not over mix just fold it in until it's just incorporated

  5. Stir in the milk

  6. Pour half of the batter into the loaf tin, then add a layer of apple slices or chopped apple depending on your preference and some of the cinnamon sugar. Repeat with the rest of the batter and then top with more apples and cinnamon sugar, push them into the batter slightly.

  7. Bake in the centre of the preheated oven. The recipes I looked at said 30-40 mins but mine took just over an hour – I covered it will foil when it started to look like it would be too brown. You know its cooked when a skewer comes out clean.

  8. Leave to cool for 10-20 mins then remove from the tin.

  9. Serve with leftover apples and cream

This time of year is tough – I don’t know why but I just want to eat nice things! I think it’s my body’s way of fattening up to keep me warm through the winter – like I need that!!

Normally I plot the recipes into my Fitness Pal and still count them. I find if I have a low-calorie healthy soup for lunch I can still enjoy a treat like this within my budget.
