Peanut butter and white chocolate blondies
Inspired by last weeks trip out to the food market, I really really wanted to try and recreate the blondie we tried from Blondie Brownie Bakes. I’ve been really obsessed with using nut butter’s in cooking and baking; especially sweet treats like cookies and doughnuts! So it was only natural to try and work some into this recipe. For these Peanut butter and white chocolate blondies, I used peanut butter and I do not regret it at all!

The finished product! These stunning beauties are deliciously gooey, the white chocolate works really well with the taste of the peanut butter. Not so surprisingly they go so so well with ice cream!

Now after reading this and seeing the gorgeous pictures, you really want to make (and eat) them, so here is the recipe. I am not an expert baker and these turned out perfectly.
Just be patient and follow the recipe exactly. Where it says to cover it and return it to the oven, do just that. I promise you will have perfect gooey blondies just like mine!

Peanut Butter and White Chocolate Blondies
A delicious blondie brownie that takes good cold, but even better when warm with ice cream
Ingredients
- 1/2 Cup Butter Melted
- 1/2 Cup Smooth Peanut Butter Or another nut butter of your choice
- 1 3/4 Cup Dark Brown Sugar
- 2 Cups Flour – plain flour All purpose flour if you are in the US
- 2 Bars White Chocolate I used 100g bars
- 5 Large Peanut Butter Cups (Reeses) Other confectionary could be used
- 2 Eggs
- 1 Pimch Salt
- 1 Pinch Sea Salt for the topping Optional
- 1 Tsp Baking Powder
Instructions

Preheat oven to 180°, and grease and line tin – I used a square tin

Combine melted butter, peanut butter and brown sugar and once smooth add the eggs one at a time

Sieve the dry ingredients and prep the chocolate by cutting the bars into rough chunks and cut 3 of the peanut butter cups into quarters

Mix the dry ingredients into the melted butter mixture until it resembles the consistency of cookie dough

Throw in ¾ of the white chocolate chunks and the peanut butter cups (remembering to keep a couple back to go on top)

Put the mixture into a square tin which you prepared at the start, smooth it off. Put the remaining White chocolate chunks, Peanut butter cups (chopped how you like) and the sea salt on the top, push them in slightly but leave them sticking out

Pop into the preheated oven for 15 minutes, remove from oven, cover with foil and return to the over for another 15-18 mins (the foil should stop it burning)

Leave in the tin to cool, cut into bite size pieces and enjoy!
