My Favourite Easy Pancake Recipes and toppings
In todays post I thought I would share some easy pancake recipes for you to make at home. I have loved pancakes right from being little and enjoying pancake day. Back then we just kept it simple with oranges and sugar. The pancakes were more like crepes/English pancakes. Then when I went to Canada for my honeymoon, I first experienced a breakfast with savoury items like bacon with pancakes and syrup (a place called Denny’s – no idea if that still exists or not as a chain) ** edit I have just had a look and not only does it still exits but there is one in Swansea and one…

Apple Cinnamon Bread
For this weeks recipe, I am sharing an Apple Cinnamon Bread recipe. This is lovely as a cake or as a pudding. I used normal eating apples that I got from someone at work who had an apple tree. If you use cooking apples you may need to alter the sugar levels. I found this recipe on Pinterest, but I am unsure who to credit for it as there are a few versions. Instant Pot Kielbasa and Potato casserole/soup
So I wasn’t exactly sure what to call this recipe, but I called it Kielbasa and Potato Casserole/soup. It’s almost too liquidy to be a casserole, but it’s certainly not liquidy enough to be a soup. It’s somewhere in between. For this recipe, I once again used my Instant Pot. In short, apart from my Actifry its one of the best purchases I have ever made. The fact you can cook meat from frozen is a godsend. And you can cook things so quickly too! There is an art to cooking with it though, especially if you want to avoid the dreaded burn notice!! (If you follow me on Instagram…

Pumpkin Spice Cupcakes
Autumn means one thing – Pumpkin Spice and what a better way to enjoy it than in a Pumpkin Spice cupcake! I love this time of year. It starts to get cooler. The leaves fall off the trees and then Starbucks brings out the Pumpkin Spice Lattes. Then you know its only a matter of time before the red cups come out and that we are on our way to Christmas. This year I have been Pumpkin picking and what better way to use those delicious pumpkins than in a Pumpkin Spice Cupcakes cake recipe. This recipe is one of the nicest cupcakes I have made. It’s quick, easy, moist…

Roasted Pepper and Tomato Soup
I don’t know about you, but there is something so comforting about a bowl of warm soup with some crusty bread. If you follow me on Instagram you would know that I make a lot of soups; if you don’t follow me – pop over and give me a quick follow now! This Roasted Pepper and Tomato soup is great for using up the old vegetables in the bottom of the fridge! I am doing really well on my healthy eating – and I promise that I will do an update on it this week. As a part of it, I am on the lookout for healthy recipes for lunch…
