Quick and easy cookie recipe

Anyone who knows me knows I am always on some sort of diet. I am still on WW currently. Within any diet, you have to have the odd treat; especially when you have a family at home who not always on a diet. I wouldn’t make these cookies to keep at home though as they are 7SP each. It’s too easy to eat about 3 without realising you have eaten any! Make them for work, or a bake sale, or when you have friends over so you can just have one!! I literally have no self-control!

Bake Sale

A couple of weeks ago we had a bake sale at work for charity (I mentioned it in last weekends weekly update). I was all set to bake lots of recipes that I had pinned on Pinterest. But there was a lot of family things going on, so I struggled to find enough time. I found a few recipes for cookies, and as I had the ingredients in, I thought I would make some. They looked like they would be quick to make.

The end result was a cookie that was chewy and delicious (if that’s how you like your cookies. I think you could probably cook them for longer if you want them crunchy rather than chewy).

The bake sale was a success, here are my tips learned for the next Bake Sale I am involved in.

Tips for a successful bake sale

  • Publicise your event well – we made posters using Canva that looked professional. But we also made sure we had lovely pictures of homemade cake on. A few posters plus word of mouth really helps!
  • Stall position – we were lucky at work that they let us put our tables at the entrance to the cafeteria. People coming in for coffee and informal meetings all had to pass us first. We were close to the door too so were more likely to be seen by people walking through the building
  • Allow plenty of time. We allowed for a couple of hours. So with set up and pack away time we pretty much lost the morning
  • Make sure you have one “star bake” to draw them in. We were lucky to have a really good home baker. She made a big cake that was covered in a chocolate drizzle and chocolate bars. It really was popular – we had it at the front and it drew in the crowds
  • Portion size – we were way too generous with portions at the start. We were charging £1 for cakes but people were shocked by how big the slices were. We wanted them to get value for money, but really people didn’t mind. It just meant we ran out of cake quicker
  • Have prices in mind before you set up; people come to buy early on before you have even started selling so you have to be on the ball
  • Have plenty of homemade goods. Homemade bakes that didn’t look like they was made by a bake-off winner sold well at ours. So “rustic” bakes work well too
  • Make sure you have ingredients lists for all of the home bakes because of allergies
  • Have some Gluten-free/vegan options
  • It’s probably safest to not include any bakes with nuts due to how bad nut allergies can be
  • Have fun and talk to people – that’s the best bit 🙂

Anyway here is the important bit – the recipe!

Chewy White Chocolate Cookies

Chewy cookies that are similar to those you get in Costco or Millies

Ingredients

  • 125 g Soft brown Sugar
  • 100 g Caster Sugar
  • 125 g Butter
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 220 g Self Raising Flour
  • 200 g White Chocolate I used the cheap 30p bars from the supermarket and cut it into chunks with a knife
  • 1 pinch Salt

Instructions

  1. Put the butter and sugar into a bowl and mix until pale and fluffy. I used my K Mix

  2. Add the egg and vanilla and mix thoroughly

  3. Add the flour and salt and mix again (I did all of this in the K Mix with the metal K attachment)

  4. Chop the chocolate if you have a whole block, then add to the mixture. if you have bought chunks/chips just throw them into the mixture and mix through

  5. Using a spoon take a heaped large teaspoon of the mix and using your hands rub them into a small ball (walnut shape)

  6. Put on to a tray that has been greased and lined. Make sure to space them out as if the recipe works correctly they will spread out to form a cookie! I had two trays on the go, one in the oven and then I got another lot ready on the other tray whilst they were cooking and cooling. Cook for 7 mins for a chewy cookie. I think probably 10 mins would give you a crunchier cookie, but I did not try it as I mean why would you?

  7. When you take the tray out do not attempt to take them off the tray for about 10 mins. Not only do they need to firm up, but also if you get any on your hand the chocolate is like molten lava! After 10 mins transfer to a cooling rack. If it's too tempting you are probably good to go after about 15 min of them coming out of the oven.

    If you were clever and molded them whilst still warm over the bottom of a glass or something they would make great cookie basket for Ice cream!

Extra things to help with baking cookies (& everything else!)

Using my K Mix makes it so easy to bake. It’s good for recipes where you have to beat the mix for a certain amount of time (meringues etc); you can leave it mixing whilst you do something else. The linked one is similar to mine, but I have a stainless steel bowl. Mine is about 3 years old now, this is probably the updated version. I think a clear bowl would be helpful to check the bottom is all mixed properly.

I am going to invest in some of these silicone baking mats. Not just for cookies, but for general cooking too. I am trying to be green where I can and this will reduce the need for greaseproof paper and foil.
